Ingredients
1 lb salmon filets 2 Tbsp peach preserves (no added sugar) 1 Tbsp olive oil Juice of 1/2 lime 1 large jalapeno, sliced Salt, to taste
How to make it
Preheat oven to 400° F. In a small bowl whisk together the preserves, olive oil, and lime juice. Sprinkle salmon with salt and place on a baking sheet skin side down. Top with half of the peach mixture and the lay a few slices of jalapeño across the top. Bake for about 5 minutes per half-inch of thickness. Half way through, brush with the remaining glaze.
