1 Tbsp light olive oil 2 Tbsp peeled and grated ginger 6 garlic cloves peeled and grated 1/2 lb beef brisket cut into strips (preferably organic) 10 oz brown rice noodles medium thickness (1 large handful) 1 head Napa cabbage chopped into bite-size pieces 1 cup edamame shelled, frozen (preferably organic) 1/2 cup frozen peas 1 cup bean sprouts 3 Tbsp reduced-sodium soy sauce or tamari 4 eggs 3 green onions, sliced 2 limes, garnish Hot sauce (optional)
How to make it
Heat half of the oil in a large frying pan over low heat. Add the grated or minced garlic and ginger, and stir until the garlic starts to brown. Set aside. Add the brisket, and turn the heat up to medium. Add more oil to the pan, and add the brisket. Turn up the heat to high, and char the brisket on all sides. Meanwhile, put the noodles in a boil, and cover with boiling water. Soak for 10 minutes. Rinse with cold water, and drain.
