The first cask, from The Shed Distillery, is currently valued at about €100,000 ($118,161), and will be opened, briefly, for a tasting on Thursday, Dec. 21 before being nestled back in the distillery for a few more years. (Three years is the minimum about of time to let the spirit mature.) The Shed opened in December 2014 and hopes to produce around 250,000 liters of whiskey a year once fully up and running.

“At The Shed we taking traditional recipes but introducing new elements such as adding organic oats and rye,” entrepreneur and co-founder PJ Rigney told the Irish Times. “In addition, we’re experimenting in terms of maturation so that it isn’t just done in bourbon casks. We’re also trying out pinot noir, marsala and sherry.” Don’t want to wait for the whiskey to reach peak maturation? The distillery is opening a new visitor center in 2018.
